Ingredients (for 4 servings):
4 cod fillets (fresh or frozen, thawed)
2 carrots (thinly sliced)
1 leek (in rings)
200 g cherry tomatoes
2 sprigs fresh thyme
2 cloves garlic (finely chopped)
200 ml 30% cream
2 tbsp butter
1 tbsp lemon juice
A pinch of smoked paprika
Salt and pepper (to taste)
Step-by-step preparation:
Preparing the fish:
Clean the cod fillets and pat them dry with kitchen paper. Sprinkle with lemon juice, salt, pepper and smoked paprika.
Frying the vegetables:
Heat the butter in a frying pan. Add the chopped garlic, leek and carrot. Fry for about 5 minutes over medium heat until the vegetables are slightly soft.
Preparing the sauce:
Pour the cream into the frying pan, stir gently and bring to the boil. Season with salt and pepper.
Frying:
Place the fried vegetables and sauce in an ovenproof dish. Place the cod fillets on top and place the cherry tomatoes and thyme sprigs next to them.
Frying:
Bake in a preheated oven (180°C) for about 20 minutes until the fish is lightly golden brown and the sauce has thickened a little.
Serving:
