Vanilla chia pudding

This simple pudding is a nutritional powerhouse. Chia seeds are known for absorbing liquid and swelling significantly, creating a gel-like, pleasantly creamy consistency. They are an excellent source of fiber and omega-3 fatty acids.

INGREDIENTS

3 tbsp chia seeds (black or white)

1 cup milk of your choice (almond, coconut, oat, or cow’s milk)
½ tsp vanilla extract
1–2 tsp sweetener (honey, maple syrup, or alternative, optional)
Toppings: fresh berries, slivered almonds, or cinnamon (optional)
DIRECTIONS

1. Mix ingredients
Combine chia seeds, milk, vanilla extract, and sweetener in a glass or small bowl.

2. Stir well
Stir or whisk thoroughly to ensure there are no lumps or sticking.

3. Settling time
Let the mixture stand at room temperature for 5–10 minutes.

4. Stir again
Stir well again to avoid lumps – this ensures a smooth consistency.

5. Chill
Cover and refrigerate for at least 2 hours (preferably overnight). The seeds will swell and thicken to a pudding-like consistency.

6. Serve
Stir again before eating and enjoy with your choice of toppings.
